Chicken Tortellini Soup


Lisa at Jersey Girl Cooks recently had this soup recipe on her blog. It is so easy and delicious, it's going to be a regular at our house. I didn't have the spinach it called for and changed it up a bit. I've posted my version of the recipe.

I'll be on vacation until December and probably won't have time to blog. Although, I am a bit obsessed with checking email on vacation and will probably stop by my blog and read posts. I'll post all about it when I return. In the meantime, enjoy the soup and thanks for visiting!

Chicken Tortellini Soup

8 cups chicken stock or broth
1 t. onion powder
1 t. garlic powder
1 T. dried parsley
2 cups cooked, shredded chicken
1/2 c. shredded carrots
16 oz package frozen cheese tortellini (I used tri colored)
1/2 c. frozen peas
salt and pepper to taste
grated Parmesan cheese for serving

In a large pot, heat stock until boiling. Add chicken and shredded carrots. When carrots are tender add tortellini. Cook tortellini according to time of package instructions. Add frozen peas. When peas are warm, add salt and pepper to taste. Serve with grated cheese on top. Makes 4 to 6 servings.

Maria has great recipes. I recently made her Cinnadoodles. I should have read the post more carefully, because I overcooked my first batch. Of course Maria told me not too, she mentions it twice. So my advice to Maria would be to edit that post and bold that part of the post for people like me who need it.

6. Have you ever tried something from number 9’s blog?

Yes. I recently made her Chicken Tortellini Florentine Soup. I changed it up a bit because I didn’t have spinach, but it was amazing. So quick and easy and delicious. I am planning on blogging about it, but just haven’t gotten around to it.

7. Has number 1 blogged something that inspired you?

I have only recently found Sophie at the Back Burner. The blog is such a well designed site and a great recipe resource that I am a bit intimidated about posting comments. I definitely need to spend more time there.

9. Do you wait for number 8 to post excitedly?

Veronica is great about posting frequently. She always has lots of great pictures that take you through the baking process. I’m always happy when Reader says she has a new post.

10. How did number 5’s blog change your life?

I am new to Birdie’s blog. But her blog is filled with good recipes for everyday food. Just the type of recipes I’m always looking for. I think one day I'll go to her site and there will be a recipe that I will make once a week for the rest of my life.

11. Do you know any of the 10 bloggers in person?

I don’t know any of the bloggers in person. It would be fun to have a GTG sometime though.

12. Do any of your 10 bloggers know each other in person?

As far as I know, none of them know each other.

13. Out of the 10, which updates more frequently?

That’s a hard one. It may be a tie between HoneyB, Maria and Veronica.

Korean-Style Pork Tenderloin


Pam at For the Love of Cooking posted this recipe for Korean Style Pork Tenderloin on her blog recently and it looked fabulous. When I read that it was also a Cooking Light recipe, I knew I had to try it. It was as good as it looked - tender with lots of flavor! The whole family loved it. Be sure and check out Pam's post. Korean Style Pork Tenderloin

1/3 cup of low sodium soy sauce
2 tbsp sugar
1 tbsp minced peeled fresh ginger (I used ground ginger)
3 tbsp rice vinegar
1 tbsp dark sesame oil (I used canola oil)
1/4 tsp crushed red pepper
4 cloves of garlic, minced
1 1/2 lb pork tenderloin, trimmed of fat
Olive oil cooking spray

Combine the first 7 ingredients in a large zip lock bag, and add the pork. Seal and marinated in a refrigerator for 8 hours our overnight, turning bag occasionally.

Preheat oven to 425 degrees. Heat a large ovenproof skillet coated with cooking spray over medium high heat. Remove pork from bag, reserving marinade. Add pork to pan, cook 6 minutes, browning on all sides. Place pan in oven, and bake at 425 degrees for 15 minutes or until meat thermometer registers 160 degrees (medium) or until desired degree of doneness. Let stand 5 minutes before slicing.

Bring reserved marinade to a boil in a small saucepan. Reduce heat, and simmer 5 minutes. Cut pork into 1/4 inch thick slices and drizzle with sauce.

Pumpkin Pancakes and an Award


We love pancakes at our house. So in honor of Halloween I decided to try pumpkin pancakes. I searched the web for a great recipe and found one at Taste of Home that was lower in fat. I merged that with my favorite whole wheat pancake recipe and they were a big hit. Next time I think I'll try adding diced apple to the recipe.


Pumpkin Pancakes

Ingredients:
2 cups whole wheat pastry flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspon pumpkin pie spice

2 cups fat-free milk
1/2 cup canned pumpkin

2 egg yolks

2 tablespoons canola oil
2 egg whites, beaten to soft peaks


Directions:

In a large bowl, combine the dry ingredients. In a small bowl, combine the milk, pumpkin, egg yolks and oil; stir into dry ingredients just until moistened. Fold in egg whites. Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until second side is golden brown. Yield: 6 servings.
