What a great idea! It would work wonderfully with leftover roasted chicken of any kind as well. Will have to remember that next time I roast one! KC Masterpiece is one of my fav's as well (I'm from Kansas City, so maybe that's why I'm partial to it).

Aren't Costco chicken the best! I know I can always whip up a good, tasy meal when I have one in the fridge. Love this quick and easy sandwich
