Guiltless Ghost Banishing Nachos

Today’s post is a guest post. I’m on vacation this week in Alaska visiting my dad and brother. Hopefully, I’m out on the ocean deep sea fishing, on a glacier cruise, or perhaps I’m just taking a nice long nap in the middle of the day.

One thing I won’t be doing this week is TRX – it’s a great workout, but it kicks my butt. I wanted to get in better shape and started going to the TRX (Suspension Training) classes at the South Jordan Rec. Center taught by Laura Buttars. Laura blogs at Transformation Trainer and has an amazing story of transformation. Through exercise and proper nutrition she lost 190 lbs! She’s now a personal trainer and is helping others to overcome their challenges and transform their lives.

As I was quietly enjoying my Mother’s Day, a ghost from my past sneaked up behind me and bit me square in the fanny. What could it possibly be? A craving for nachos. What the hell….where was this coming from? I decided it didn’t really matter where it was coming from, it was here and I had to decide what to do about it.

Now, I tell my clients all the time not to ignore their cravings but to handle them wisely when they arise. So, I handled it. I went into the kitchen and I made myself some nachos (and yes, I saved the left overs for later). I’ve decided to put the “recipe” on my website so that if the same ghost from my past sneaks up on you, you can banish it without any guilt, just like I did!

This recipe will make enough to banish the nacho craving ghosts of you and three of your closest friends, so get the girls together and make a night of it! Who knows, you could even wear sombreros and watch The Three Amigos (if that stupid movie doesn’t scare the ghosts away, I don’t know what will!)

Guiltless Ghost Banishing Nachos

Ingredients

  • 1.25 lbs. extra lean ground turkey
  • 1 medium onion, minced
  • 1/8-1/2 tsp. garlic powder, to taste
  • 1/8-1/2 tsp. cumin powder, to taste
  • 1/8-1/2 tsp chili powder, to taste
  • 1/8 tsp. chipotle chili powder, to taste
  • 1/2 head romaine lettuce, washed and chopped
  • 8 Roma tomatoes, washed and chopped
  • 4 green onions, washed and chopped
  • 1 (16 oz.) can of chili beans
  • 1 (16 oz.) can of fat free re-fried beans
  • 1 (8 oz.) can of sliced olives
  • 1 cup 2% reduced fat fiesta blend shredded cheese
  • Baked tortilla chips
  • 1 dallop of light sour cream, if desired

Directions

  1. In a skillet, cook the ground turkey, the garlic powder and the onion until the turkey is browned and the onions turn clear.
  2. In an separate skillet, stir together the re-fried beans and the chili beans and warm through.
  3. On a microwave safe platter, arrange the chips and sprinkle with the shredded cheese. Place the platter in the microwave and set for 30 seconds-1 minute at a time until cheese is melted completely.
  4. Remove the platter from the microwave and layer the remaining ingredients on top of the chips (I layered them as follows: beans, ground turkey, lettuce, tomatoes, olives and sour cream. Then I sprinkled the green onions on top).
  5. There you have it, Guiltless Ghost Banishing Nachos! (Btw, These are SO good you’ll want to print this recipe out and keep it close by!)

I couldn’t wait to try the recipe, so I whipped up a batch using the Pressure Cooker Chicken Taco Filling that I had stashed in the freezer. I used the new Baked Tostitos Scoops. The nachos are so good and even better that they’re guilt free!

    I hope you’ve had a wonderful vacay, Barb! I’ve missed so many of your latest entries..just scrolled through them..and wow..I’m starving now! Only problem is, I can’t have all of the goodies here (too lazy and without ingredients needed). These nachos are the guiltiest looking guilt-free nachos I’ve ever seen! Definitely a keeper :)

    It looks entirely too good to not be bad for you! I’m at the point where the freshness and taste of components of any dish…nachos, pizza and salads in particular are more important than gobs of cheese and a heavy dressing. This is a perfect example!
