Today’s post is a guest post. I’m on vacation this week in Alaska visiting my dad and brother. Hopefully, I’m out on the ocean deep sea fishing, on a glacier cruise, or perhaps I’m just taking a nice long nap in the middle of the day.
One thing I won’t be doing this week is TRX – it’s a great workout, but it kicks my butt. I wanted to get in better shape and started going to the TRX (Suspension Training) classes at the South Jordan Rec. Center taught by Laura Buttars. Laura blogs at Transformation Trainer and has an amazing story of transformation. Through exercise and proper nutrition she lost 190 lbs! She’s now a personal trainer and is helping others to overcome their challenges and transform their lives.
Laura Buttars, Guiltless Ghost Banishing Nachos
As I was quietly enjoying my Mother’s Day, a ghost from my past sneaked up behind me and bit me square in the fanny. What could it possibly be? A craving for nachos. What the hell….where was this coming from? I decided it didn’t really matter where it was coming from, it was here and I had to decide what to do about it.
Now, I tell my clients all the time not to ignore their cravings but to handle them wisely when they arise. So, I handled it. I went into the kitchen and I made myself some nachos (and yes, I saved the left overs for later). I’ve decided to put the “recipe” on my website so that if the same ghost from my past sneaks up on you, you can banish it without any guilt, just like I did!
This recipe will make enough to banish the nacho craving ghosts of you and three of your closest friends, so get the girls together and make a night of it! Who knows, you could even wear sombreros and watch The Three Amigos (if that stupid movie doesn’t scare the ghosts away, I don’t know what will!)
Ingredients
- 1.25 lbs. extra lean ground turkey
- 1 medium onion, minced
- 1/8-1/2 tsp. garlic powder, to taste
- 1/8-1/2 tsp. cumin powder, to taste
- 1/8-1/2 tsp chili powder, to taste
- 1/8 tsp. chipotle chili powder, to taste
- 1/2 head romaine lettuce, washed and chopped
- 8 Roma tomatoes, washed and chopped
- 4 green onions, washed and chopped
- 1 (16 oz.) can of chili beans
- 1 (16 oz.) can of fat free re-fried beans
- 1 (8 oz.) can of sliced olives
- 1 cup 2% reduced fat fiesta blend shredded cheese
- Baked tortilla chips
- 1 dallop of light sour cream, if desired
Directions
- In a skillet, cook the ground turkey, the garlic powder and the onion until the turkey is browned and the onions turn clear.
- In an separate skillet, stir together the re-fried beans and the chili beans and warm through.
- On a microwave safe platter, arrange the chips and sprinkle with the shredded cheese. Place the platter in the microwave and set for 30 seconds-1 minute at a time until cheese is melted completely.
- Remove the platter from the microwave and layer the remaining ingredients on top of the chips (I layered them as follows: beans, ground turkey, lettuce, tomatoes, olives and sour cream. Then I sprinkled the green onions on top).
- There you have it, Guiltless Ghost Banishing Nachos! (Btw, These are SO good you’ll want to print this recipe out and keep it close by!)
Notes
Guiltless Ghost Banishing Nachos Laura Buttars
I couldn’t wait to try the recipe, so I whipped up a batch using the Pressure Cooker Chicken Taco Filling that I had stashed in the freezer. I used the new Baked Tostitos Scoops. The nachos are so good and even better that they’re guilt free!

I love to bake, especially cookies, cakes, and pies. I’ll post my adventures in the kitchen, my favorite new recipes, as well as our family favorites.

A very enjoyable guilt-free dish!
Cheers,

This is an absolutely beautiful salad!
Good day Barbara, your salad looks truly amazing! It’s about 12am here and am salivating. ha…. Thanks for sharing another gorgeous bite. Have a lovely day.
Blessings, Kristy
I have many ghosts haunting me . . . your ghost looks look delish!
I’m on vacation also..
Isn’t it great?
Hope you are having great fun in Alaska!!!!
Oh MY!!! I could eat the entire plate! I love nachos and these look extraordinary!
It looks entirely too good to not be bad for you! I’m at the point where the freshness and taste of components of any dish…nachos, pizza and salads in particular are more important than gobs of cheese and a heavy dressing. This is a perfect example!
Wow. These nachos look amaaaaazing!! Now I can’t wait for this ghost to creep up on me so that I can make these haha.
P.S. So this dish aimed for girls only? Can men eat them, too? LOL
I hope you enjoyed your vacation, Barbara.
Laura – These do sound fantastic! I love them in the scoops; I bet they could be a great appetizer. As for your transformation kudos to you for making that commitment. You look great!
I’m all for quilt free nachos!!! Have fun in Alaska Barb. I cant wait to see the pictures.
This looks great! I love nachos!
I’m in love with how healthy these nachos are — and the fact that no flavor has been sacrificed! Great guest post!
Hope you’re having a wonderful vacation, Barbara!
I may or may not be drooling right now, lol. >< I adore nachos and seeing this kind that aren't covered in gloppy plastic cheese is quite refreshing.
What a delicious and healthy meal! Have a great vacation, Barbara!
Wonderful plateful of guilt-free nachos!
Have a super trip, Barbara!
Yep! Its a winner. I would definitely not be able to resist these nachos or allow them to sit for longer than 5 minutes. They would be gone in less than a minute! Great guest post!
This looks so amazing! I cannot wait to try this recipe.
I hope you’ve had a wonderful vacay, Barb! I’ve missed so many of your latest entries..just scrolled through them..and wow..I’m starving now! Only problem is, I can’t have all of the goodies here (too lazy and without ingredients needed). These nachos are the guiltiest looking guilt-free nachos I’ve ever seen! Definitely a keeper
Wow….those nachos look amazing! Have fun on vacation
