Hi Fran - sorry you had trouble. You&#039;ve got to cook the curd until it thickens up and then let it get completely chilled then it will have a soft jam-like consistency. You also want to make sure your cream is whipped to soft peaks and then gently fold the cream with the curd so it doesn&#039;t deflate and get runny.]]></description>

					<description><![CDATA[I have the best recipe for delicious lime curd. Its easy and always good. I always had trouble with curds not thickening, This one always thickens. Just put 4 eggs (I use x-large) 1 1/2 cups sugar, 1/2 cup fresh squeezed lime juice, tsp lime zest/peel (optional) 1/8 tsp salt in a medium pan. Put on medium heat and whisk until blended.  Add 1/2 cup butter cubed and whisk constantly until thickened &#038; coats back of spoon. Pour into clean bowl and cool 15 minutes or so. Cover with plastic and refrigerate. It DOES thicken as it cools. Excellent and easy. Yum]]></description>

					<description><![CDATA[Hello Barbara, too bad I could not try your recipe - i am raw and eating only fruits and vegetables... but pictures are awesome! I think you find a great exposure to your love of baking - you are posting to blog, baking is still a hobby. I am sure you could start a successful cafe, but it could ruin you love to bake - that happened to me, I really loveded driving before working as a driver.

Maybe you are planning to write a book of recipes? ;)
