About a year ago, Beth inspired me to make granola and I’ve been whipping up different kinds of granolas ever since. This one is a simple, easy recipe that uses ingredients that I usually have in my pantry. If you haven’t made homemade granola before give it a try. You’ll be amazed how much better it is than granola you buy in the store.

I usually make a double batch and give one batch a way. It makes a great, healthy gift for a neighbor or a friend. If I’m baking a double batch I cook it for 10 minutes longer.

    Ingredients

    • 4 cups old fashioned oats
    • ½ cup light brown sugar packed
    • ½ cup chopped almonds
    • ½ cup raisins
    • ¼ cup of flax seed meal optional
    • ½ teaspoon cinnamon
    • ¼ teaspoon of kosher salt
    • ⅓ cup canola oil
    • ¼ cup honey
    • 1 tablespoon vanilla

    Instructions

    • In a large bowl mix oats, brown sugar, almonds, raisins, flax seed meal, cinnamon, and salt.
    • In a microwave safe bowl heat canola oil and honey until warm, about 30 seconds. Remove from heat and whisk in vanilla extract and cinnamon. Pour this mixture over the oat mixture and mix thoroughly until everything is completely coated.
    • Spread evenly on a parchment or silpat covered cookie sheet. Bake at 300º for about 20 minutes until slightly golden brown. Don’t stir during baking. Cool completely and break into pieces. Store in an air tight container.

I’m not a granola-eater, but my daughter is, so I make it every time she comes home. I use Ina Garten’s recipe and keep the fruit separate from the dry and it keeps a really long time that way.
This sounds like a good recipe….think I will add cinnamon to mine.

I love homemade granola but mine has never looked so compact and crunchy-like – it was always quite separate unlike yours which means I’m gonna try out your recipe – it looks like the one I’ve been looking for for ages 🙂

I agree with you Barbara. I wont buy the granola at the store. Homemade is too easy to make and it really is better then store bought, hands down!
Looks like I have another recipe to try!

I’m with Rosa, this would be great with yoghurt. I think I’d leave out the raisins and add some walnuts and maybe a tiny bit of coconut. Yum!

I love homemade granola! A couple of years ago, I found the recipe for the granola they serve at Sundance and have made that for a while, but it’s time for a change! Change is good!
