Hi Anita - I like to use the whole wheat pastry flour in this recipe to add texture, but it&#039;s finely ground whole wheat texture so it isn&#039;t as heavy as most whole wheat flours and you still get a light and fluffy roll. Bread flour is a high protein flour with better gluten development for a lighter fluffier roll too.]]></description>
