Have you considered making this sandwich as a pita pocket. Very Mediterranean and with some green left lettuce and a couple of sliced of roman tomatoes, I could see that working. Just my two cents, but more importantly, your recipe is awesome. Thank you for sharing.

Hi Helen! Your sweet comment really brightened my day. What a great idea to use leftover chicken, to make your own slaw, and turn it in to chicken salad. So glad I could be your inspiration. Thanks so much!

What a great combination of flavors! I used your ingredients to make a chicken piccata sandwich filling. I made my own slaw mix by grating leftover broccoli stems, carrots and cabbage in the new food processor I got for Christmas. Then I mixed the slaw with fresh lemon juice, olive oil, capers, artichoke hearts, garlic, pepper, and enough mayonnaise to get the consistency I preferred.

Half of this mixture was put aside to use on fish tacos later this week. The leftover chicken breast from last night's cookout was warmed, cubed, added it to the slaw mixture, and spread on toasted croissants. I received rave reviews from my family, and I owe it all to you!

Thank you for posting such a wonderful recipe. Your originality and the possibility of adapting the ingredients for other dishes should qualify you for the $25,000 prize.
