Hi Emma - if you&#039;re sure the consistency of the dough is correct then you probably aren&#039;t piping the eclairs high enough. It needs to be tall enough to form a pocket. Go slowly as you pipe so that plenty of dough builds up and gives more height. 					<description><![CDATA[Hi Barbara! I&#039;m really struggling to get my choux to rise. I&#039;m baking at 4,000ft so I&#039;m not sure if I have a low moisture problem? If I don&#039;t pipe thick enough might that cause issues as well? I&#039;m sure I&#039;ve got the dough consistency correct and I&#039;m using bread flour so I&#039;m just not sure what else it could be.]]></description>

When I saw this recipe for eclairs it reminded me of Cream Puffs that I purchased at a Bake Shop in my home town in the 50s.  They were not made from choux pastry but the bun, which was the shape of a hamburger bun, was soft and sweet (but not a bread dough bun).  The Cream Puff bun was sliced horizontally and filled with whipped cream and had a dusting of icing sugar on the top.  I loved those Cream Puffs and have done a lot of research trying to find a recipe for those buns.  It&#039;s been years and so far I have had no luck.  Is this bun something you have ever come across?  I tried a recipe for Cream Buns but it didn&#039;t come close.  They were more like dinner rolls.  I&#039;m hoping either you or your readers might be able to help me out.  I keep hoping.  Thank you.]]></description>
