I added 1 Tbsp (Tofutti better than) cream cheese to the mix and it took the edge off and rounded it out. Great muffins, wanted to do something with mangos this morning and this hit the spot!

I wasn’t really happy with how it turned out so I went back to peeling off the tops of the muffins. 🙂 I would LOVE mango and lime muffins. Yum. I can’t wait for mango season to come again.
