In reply to Marissa Kubinski. The original recipe I adapted it from calls for melted butter (I've used both salted and unsalted), but I'm guessing you could substitute canola oil if you'd rather as well. Please let me know if you try it. Great question. Thanks!

Hi there! Can I use Canola Oil instead of Coconut? If not, do you suggest using melted unsalted butter?

This looks fantastic! I also love baking quick breads better than anything and the family loves them because they make the best breakfast. I need to kick up my banana bread habit and this one is perfect! The texture looks wonderful! I’m writing this down!

I’m a fan of quick breads too, Barbara. I turn to Maida Heatter for a lot of recipes. Of course, they’re all full fat….really must try your version. I’ve never used coconut oil. It’s on my list as I see more and more recipes with it.

Oh my, these marbled chocolate banana breads look so delicious…and I bet they taste wonderful. I love that fact that these are a more healthy version. I’ve switched to using more coconut oil in my baking whenever I could. Can’t wait to try these.
