In reply to Di. Hi Di - cakey cookies like these don't typically rise or spread much. Sounds like you did everything just right. If you want a flatter cookie, just flatten it a bit before baking. Glad you enjoyed them.

Recipe calls for pumpkin pie spice but directions do not include. Are you substituting the “cinnamon and nutmeg” called for in the directions?

Beautiful cookies and I like it that they are nice a fat too.

I know that some cookies just don't bake up right if you use all butter. You might want to try making them with a good quality margarine. They should still set up nicely but the margarine will add some flavor as well.

Interesting with the pumpkin in the cookie. I'm pretty sure it would taste great, although can't really imagine the flavours very well.
