					<description><![CDATA[I used my proven macaron recipe, but this filling.  The filling is yummy but sticky to fill.  Is it possible to cool this first then hand roll into ball to place on shell?...or does it get too firm?]]></description>

Hi Kimberly - typically if your macarons are flat it&#039;s because you&#039;ve overmixed the batter. You have to very gently mix the batter and you can test to see if you&#039;ve mixed it enough by allowing the batter to drip off the spatula into the bowl.
