1beaten egg
2cupsall-purpose flour
4teaspoonsbaking powder
½teaspoonsalt
1tablespoonground cinnamon
1cupmilk
1cupapplecut into small cubes
Instructions
Preheat your oven to 425°F (220°C).
Prepare a 12-cup muffin tin by greasing the cups or lining them with muffin liners.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the beaten egg until well combined.
In a separate bowl, sift together the all-purpose flour, baking powder, salt, and ground cinnamon.
Add the flour mixture alternately with the milk to the butter-sugar mixture, stirring after each addition. Begin and end with the flour mixture.
Gently fold in the small cubes of apple into the muffin batter.
Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
Bake the muffins in the preheated oven for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Once baked, remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
You can add a sprinkle of cinnamon-sugar on top of each muffin before baking to add a delightful crunchy texture.
For a healthier version, you can use whole wheat flour instead of all-purpose flour or reduce the sugar amount.
If you prefer a more pronounced apple flavor, you can increase the amount of apple cubes in the muffin batter.
