Apple Cinnamon Muffins

Ingredients

  • ¼ cup butter softened
  • ½ cup granulated sugar
  • 1 beaten egg
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup milk
  • 1 cup apple cut into small cubes

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare a 12-cup muffin tin by greasing the cups or lining them with muffin liners.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the beaten egg until well combined.
  • In a separate bowl, sift together the all-purpose flour, baking powder, salt, and ground cinnamon.
  • Add the flour mixture alternately with the milk to the butter-sugar mixture, stirring after each addition. Begin and end with the flour mixture.
  • Gently fold in the small cubes of apple into the muffin batter.
  • Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake the muffins in the preheated oven for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Once baked, remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can add a sprinkle of cinnamon-sugar on top of each muffin before baking to add a delightful crunchy texture.
  • For a healthier version, you can use whole wheat flour instead of all-purpose flour or reduce the sugar amount.
  • If you prefer a more pronounced apple flavor, you can increase the amount of apple cubes in the muffin batter.
  • Be sure not to overmix the muffin batter; a few lumps are okay as overmixing can lead to dense muffins.
  • These muffins are best enjoyed fresh and warm, but you can store any leftovers in an airtight container at room temperature for up to a few days. Reheat them in the microwave or oven for a few seconds to restore their freshness.
