Chicken Tortellini Soup Recipe

This quick and easy one-pot chicken tortellini soup is the perfect 30-minute dinner for a busy night.

Ingredients

  • 8 cups chicken stock or broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon dried parsley
  • 2 cups cooked shredded chicken
  • ½ c. shredded carrots
  • 16 oz package frozen cheese tortellini I used tri colored
  • ½ cup frozen peas
  • salt and pepper to taste
  • grated Parmesan cheese for serving

Instructions

  • In a large pot, heat stock, onion powder, garlic powder, and parsley until boiling.
  • Add chicken and shredded carrots.
  • When carrots are tender add tortellini. Cook tortellini according to time of package instructions.
  • Add frozen peas. When peas are warm, add salt and pepper to taste.
  • Serve with grated cheese on top.
