BANANA  BREAD  PUDDING

This Banana Bread Pudding is sweet, lightly spiced, and topped with a creamy homemade bread pudding sauce. It’s delicious for dessert or a decadent breakfast!

 INGREDIENTS

– 1 large French bread loaf cut into 1” cubes – 1 12 ounce can evaporated milk divided – 4 large eggs – ¾ cup granulated sugar – 4 tablespoons ¼ cup unsalted butter, melted – 2 teaspoons vanilla extract – 1 teaspoon cinnamon – ½ teaspoon salt – ¼ teaspoon nutmeg – 4 bananas divided

Preheat oven to 350°F. Grease a 9×13” casserole dish and add the bread cubes.

Measure ¼ cup evaporated milk into a glass microwave safe mixing bowl and set aside for the caramel sauce.

In a second mixing bowl, add the remaining (1 ¼ cups) evaporated milk, eggs, sugar, 4 tablespoons melted butter, 2 teaspoons vanilla, cinnamon, salt, and nutmeg and mix well.

Pour over the bread cubes and toss to make sure bread is evenly coated with liquid. Slice 2 bananas and gently tuck the banana slices into the bread mixture. Set aside for 10 minutes to allow to bread to soak up most of the liquid.

Place the casserole dish into the oven and bake for about 40 to 50 minutes. The pudding is done when the top is golden brown and the middle is set. Remove from the oven and allow to cool for 10 minutes.

Serve the banana bread pudding with slices of banana and caramel sauce on top.
