HOMEMADE BISCOTTI RECIPE

Biscotti are delightful Italian cookies that are twice-baked, resulting in a satisfyingly crunchy texture and a wide range of delicious flavors.

 INGREDIENTS

– ½ cup butter softened (either salted or unsalted) – ¾ cup granulated sugar – 2 large eggs at room temperature – 2 teaspoons almond extract – 1 teaspoon vanilla extract – 2 cups all-purpose flour – 1 teaspoon baking powder – ¾ cup almond slivers (toasted or untoasted

Soften the butter in a microwave-safe bowl for 10 seconds, then transfer it to a large mixing bowl.

Cream the softened butter and sugar together using an electric hand mixer until smooth. Then gradually add the eggs, almond and vanilla extracts, and whisk until fully combined.

Slowly add the flour and baking powder, whisking until there are no dry spots. Fold in the almond slivers for even distribution.

Divide the dough in half and shape each half into an 8-inch long, 4-inch wide log on a baking sheet. Bake the logs for about 35 minutes at 325°F. Let them cool for 5 minutes.

Slice the slightly cooled logs into classic biscotti shape using a sharp serrated knife. Spread the sliced biscotti on the baking sheet.

Return the biscotti to the oven and bake for an additional 20-25 minutes, flipping them halfway through for even baking.

Serve the biscotti immediately or allow them to cool completely before storing.
