TURTLE  CHEESECAKE

If you’re a fan of cheesecake and turtles, then Turtle Cheesecake is a match made in dessert heaven. This indulgent dessert is a favorite among many for its rich and creamy texture, crunchy caramelized nuts, and gooey chocolatey drizzle.

 INGREDIENTS

Crust – 6 graham crackers or 1 ½ cups graham cracker crumbs – ½ cup butter melted – ¼ cup sugar – ⅓ cup pecan chopped in pieces Filling – 3 8 oz. cream cheese – 1 ½ cup sugar – 5 eggs – 1 teaspoon vanilla – 3 tablespoons lemon juice – 2 tablespoons cornstarch – 16 oz sour cream

 INGREDIENTS

Toppings – 1 cup chocolate chips I like to use mini chips – 1 cup pecan chopped in pieces – ½ cup caramel use bits or chop into pieces – 2 tablespoon milk

Prepare the crust according to the recipe. Bake for 10 minutes.

While the crust is baking, use a mixer to beat the cream cheese until it becomes completely smooth. Add the sugar to the cream cheese and mix well.

With the mixer on low speed, add one egg at a time to the cream cheese mixture, making sure to mix well after each addition.

Add the vanilla, lemon juice, cornstarch, and sour cream to the mixture and mix well until everything is completely smooth.

Pour the filling into the prepared crust and spread it evenly. Bake the cheesecake in the oven for 1 hour.

Drizzle the caramel over the cheesecake while it is still in the oven. Sprinkle the chocolate chips and pecan pieces over the top of the cheesecake.

Turn off the oven and let the cheesecake sit in the hot oven for another 10 minutes until the chocolate is melted. Remove the cheesecake from the oven and let it sit until it comes to room temperature.

Move the cheesecake to the refrigerator and chill it overnight. Enjoy your delicious turtle cheesecake!
