Spicy Chicken Soup



The coming months are the perfect time for a steaming hot bowl of soup. This is my family's favorite soup. My married daughter loves making it in the morning before heading out to work and coming home to the delicious spicy aroma. My boys love it because it is hearty and loaded with lots of tender chicken.

I adapted it from a highly rated recipe on allrecipes. It makes a huge pot of soup and freezes very well. I like to freeze it in individual serving portions, about 1 1/2 cups. This was one of the first recipes I posted when I started my blog but it's so good I wanted to update it and share it again.

Spicy Chicken Soup
1 (16 ounce) jar mild chunky salsa
2 (14.5 ounce) cans peeled and diced tomatoes
2 (14.5 ounce) cans chicken broth
2 (16 ounce) cans black beans, drained
1/2 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 tablespoons dried parsley
1 tablespoon onion powder
1 tablespoon chili powder
2 tablespoons olive oil
1 onion, chopped or 2 T. dehydrated minced onion
3 cloves garlic, chopped
8 skinless, boneless chicken breast halves (can be added frozen)
1 (15 ounce) bag frozen corn

Combined all ingredients and cook in crock-pot for 6-8 hours on low.

I usually don't add the frozen corn until the last 30 min. I like to serve it will a little cheese on top, or you could top it with a little sour cream and tortilla strips. 

My daughter's addition: For those of you with smaller crockpots only add half the chicken and take out a can of beans.

My daughter asked me for more great recipes like this that she can make in the morning and come home to a healthy homemade meal all ready to eat, with lots of leftover she can take with her for lunch. This soup looks and sounds amazing! I agree on always wanting recipes that are easy--easy to make, reheat, and have lots of leftovers.

The first one that came to my mind was this one:

It makes oodles and is so yummy for many days after. It also freezes well (you could freeze it into portions). You can make tacos with it or also make quesadillas with the meat.

I don't think I can could come up with a make-ahead recipe at this moment, but I would like to comment on how comforting and great your soup looks. YUM!

I havethis Minestrone soup in my place.
I make them in huge quantities and freeze them in freeze bags in portion, so i have a filling soup when ever myfamily wants.

I love coming home to the aroma of dinner cooked. This sounds fantastic. I've been looking for a few more crockpot dinners myself! I made turkey legs in the crockpot a few days ago and it was great. Just rub your legs with EVOO. It gave some spices to use but I just used Emeril's chicken spice. Throw in some fresh herbs (I used rosemary and sage) and cook on low for 10-12 hours. Or on high 5-6 hours. It was fall off the bone tender.

Ohhh.. I'm such a soup person. Hubby too. This looks like a good one to try.

I always make my pot roast in the crockpot. Before leaving for work, drop the roast in the crockpot, season with an envelope of Lipton Onion Soup mix. Dump a can of beef broth over all. Set on low and it's pull apart tender when you get home. The leftovers and remaining broth make for some great beef and noodles the next day too!

I made this tonight for company, and we all absolutely loved it! We sprinkled a little cheddar cheese and some crushed tortilla chips on top. I will definitely be making this again!!
