Prevent your screen from going to sleep
- 2 plum tomatoes diced
- 1 clove garlic minced or pressed
- pinch of salt and pepper
- 1 teaspoon olive oil
- 2 boxes Athens® Mini Fillo Shells 30 shells
- 8 ounces fresh mozzarella cheese ¼" dice
- small handful fresh basil sliced into thin ribbons
Preheat oven to 400°.
In a large bowl combine tomatoes, garlic, salt and pepper, and olive oil.
Fill the Fillo shells with the diced mozzarella. Bake for 5 minutes or until the cheese is melted. Remove from oven and top with prepared tomatoes.
Bake for an additional 5 minutes to soften the tomatoes. Remove from the oven and top with fresh basil.
