Roll out your sheets of pizza dough. Cut each sheet of dough into sheets about 2 inches thick and wrap your mozzarella sticks so they are completely covered by dough.
Bake 4 bosco sticks at a time on a baking sheet for 12 minutes.
Melt the butter in the microwave and then whisk your butter together with the Italian seasoning. Brush the butter on your bosco sticks.

Notes
If the tops are browning too quickly, tent with foil during baking.
My family likes garlic, so I like to sprinkle a bit of garlic salt on top of the breadsticks after baking or mix into the melted butter along with the Italian seasonings.
Cheese sticks can be substituted with strips of cheese cut off of a block. Just make sure the dough wraps completely around the cheese.
Give the breadsticks plenty of room on the baking sheet so they can expand — placing them 2 inches apart should be good.
