Breakfast Quesadillas Recipe

This Breakfast Quesadilla Recipe is easy to make, has gooey cheese on the inside, and is topped with your favorite salsa or guacamole!

Ingredients 

  • 8 flour tortillas
  • 1 pound brekfast sausage, cooked
  • 6 large eggs scrambled
  • 1 cup shredded cheddar cheese
  • salsa for serving, optional

Instructions

  • If you haven’t already, cook your sausage and eggs.
  • Top a tortilla with ¼ of the sausage, eggs, and cheese. Transfer the tortilla to a pan over medium-high heat and top with another tortilla.
  • Cook your quesadilla for about 3 minutes per side, or until golden brown.
  • Serve immediately with optional salsa and enjoy!

Notes

  • While these quesadillas are best served fresh, you can store them in an airtight container or wrap them in tin foil and keep them in the fridge for up to 4 days.
  • Reheat your quesadillas on the stove over low-medium heat or in the microwave.
  • Add some spice by using pepper jack cheese instead of regular cheddar.
  • Add some extra seasoning by sprinkling 1 teaspoon of Italian seasoning, freshly chopped parsley, or dried oregano over your eggs as they cook.
  • We like to use spicy ground sausage, but any kind of ground sausage will work great.
  • For an extra crunchy quesadilla, melt a tablespoon of butter in your pan before adding the quesadilla
