    This Breakfast Quesadillas Recipe is easy to make, has gooey cheese on the inside, and is topped with your favorite salsa or guacamole! With just a few ingredients, you’ll have breakfast whipped together in no time.

    Recipe Ingredients

    • Flour Tortillas—You can use small, medium, or large tortillas.
    • Sausage—We use spicy ground sausage for some heat, but any kind of ground sausage will work.
    • Large Eggs—Scrambled.
    • Cheddar cheese— Adds a savory element to the dish and helps hold the ingredients together.

    How To Make Breakfast Quesadillas

    Step 1: If you haven’t already, cook your sausage and eggs.

    Step 2: Top a tortilla with ¼ of the sausage, eggs, and cheese. Transfer the tortilla to a pan and top with another tortilla.

    Step 3: Cook for about 3 minutes on each side. 
    Cut up cooked breakfast quesadilla.
    Step 4: Cut the quesadilla and serve immediately.

    How do I keep my quesadilla from getting soggy?

    One of the easiest ways to prevent your quesadillas from getting soggy is to melt a tablespoon of butter in your pan before you add the quesadilla. This will help the outside become golden brown and crispy. The second tip is to layer the cheese before the eggs, sausage, or other ingredients. The cheese will act as a barrier to prevent the inside of the tortilla from becoming too moist.

    Can I store breakfast quesadillas in the fridge?

    These quesadillas are best served fresh, but you can store them in an airtight container or wrap them in tin foil and keep them in the fridge for up to 4 days. Reheat the quesadillas on the stove over low-medium heat or in the microwave. Alternatively, if you have all the ingredients prepped, you can store them in the fridge separately, ready to assemble any time! 

    What’s the best cheese to use?

    Cheddar is a classic, but feel free to experiment! Pepper jack adds a nice kick, while mozzarella gives you that perfect cheese pull.

    • Prep is important: Cook and cool your fillings beforehand. This prevents a soggy tortilla and makes assembly easy.
    • Endless toppings: Serve with a variety of dips like salsa, guacamole, or sour cream. Mix and match to your liking!
    • Double cheese: Sprinkle cheese directly on the tortilla as well as in the filling. It acts like glue, holding everything together.
    • Medium-high heat: Cook your quesadillas on medium-high heat. This ensures the cheese melts perfectly without burning the tortillas.

    Ingredients 

    • 8 flour tortillas
    • 1 pound brekfast sausage, cooked
    • 6 large eggs scrambled
    • 1 cup shredded cheddar cheese
    • salsa for serving, optional

    Instructions

    • If you haven’t already, cook your sausage and eggs.
    • Top a tortilla with ¼ of the sausage, eggs, and cheese. Transfer the tortilla to a pan over medium-high heat and top with another tortilla.
    • Cook your quesadilla for about 3 minutes per side, or until golden brown.
    • Serve immediately with optional salsa and enjoy!

    Notes

    • While these quesadillas are best served fresh, you can store them in an airtight container or wrap them in tin foil and keep them in the fridge for up to 4 days.
