Easy Derby Pie

Derby Pie is a dessert originating from Kentucky, consisting of a luscious combination of chocolate chips, chopped nuts, and a sweet filling encased in a flaky pie crust, creating a mouthwatering treat.

Ingredients 

  • ¼ cup butter
  • 1 cup sugar
  • ½ cup flour
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup chocolate chips
  • 1 cup chopped walnuts or pecans
  • 1 unbaked 9-inch pie shell

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a microwave-safe bowl, melt the butter in the microwave.
  • Whisk in the sugar and flour until well combined.
  • Add the eggs and vanilla to the mixture, and continue whisking until smooth.
  • Stir in the chocolate chips and chopped walnuts (or pecans) until evenly distributed.
  • Pour the mixture into the unbaked 9-inch pie shell, spreading it evenly.
  • Place the pie in the preheated oven and bake for 40-45 minutes, or until the middle is set. You can test the doneness by inserting a toothpick into the center of the pie—if it comes out clean or with just a few crumbs clinging to it, the pie is ready.
  • Once baked, remove the pie from the oven and allow it to cool completely before serving. This will allow the pie to set properly.

Notes

  • While walnuts are traditional in this recipe, you can substitute them with pecans if desired. 
  • After baking, slide your pie to the back corner of the counter. This slightly cooler spot lets it set gradually over 3 hours, giving you that perfect gooey-but-sliceable texture.
  • Let your butter-sugar mixture cool for about 5 minutes before stirring in the chocolate pieces. They should stay suspended throughout the filling rather than sinking.
  • Enjoy it warm with vanilla ice cream, at room temperature with whipped cream, or chilled with your morning coffee.
