Ingredients
2plum tomatoesdiced
1clovegarlicminced or pressed
pinchof salt and pepper
1teaspoonolive oil
2boxes Athens® Mini Fillo Shells30 shells
8ouncesfresh mozzarella cheese¼" dice
small handful fresh basilsliced into thin ribbons
Instructions
Preheat oven to 400°.
In a large bowl combine tomatoes, garlic, salt and pepper, and olive oil.
Fill the Fillo shells with the diced mozzarella. Bake for 5 minutes or until the cheese is melted. Remove from oven and top with prepared tomatoes.
Bake for an additional 5 minutes to soften the tomatoes. Remove from the oven and top with fresh basil.
