Spicy Chicken Stuffed Jalapenos with Bacon

These Chicken Stuffed Jalapenos combine tender chicken, spicy jalapenos, crispy bacon, and tangy barbecue sauce for the ultimate crowd-pleasing appetizer. This delicious bite brings together everything we love about bold flavors.

Ingredients 

  • cup barbecue sauce
  • a dash of Tabasco Sauce
  • 2 jalapenos peppers
  • 8 slices bacon cut in half*
  • 1 large boneless skinless chicken breast cut in to 1 inch pieces
  • Mexican Crema and Cilantro for garnish

Instructions

  • Preheat oven to 400°F. Line a baking sheet with foil or a silicone baking mat.
  • In a small bowl, mix together the barbecue sauce and Tabasco. (Add more Tabasco if you like it spicy.)
  • Cut the jalapenos in half lengthwise; remove the stem and seeds. Cut each jalapeno half in to 4 pieces, so you have 16 pieces total.
  • Place a piece of jalapeno on a piece of bacon. Top with a piece of chicken; wrap bacon around the chicken and jalapeno. Place seam side up on the prepared baking tray.
  • Baste the top and sides of the bite with BBQ sauce. Bake for 15 minutes. Remove bites from the oven and flip the bites over; baste with remaining BBQ sauce. Return to the oven and bake another 10 to 15 minutes until the bacon is crispy and the chicken is cooked through.
  • Serve with chopped cilantro and a drizzle of Mexican Crema, Serve additional Crema on the side for dipping if desired.

Notes

Garnish Options: Fresh cilantro and Mexican crema elevate the presentation and add cooling elements to balance the heat. 
Jalapeno Varieties: Different jalapeno varieties have varying heat levels, so taste-test a small piece before deciding on your Tabasco addition. Fresher jalapenos tend to be hotter, while older ones may be milder and slightly sweeter.
Bacon Wrapping: Stretch the bacon slightly as you wrap to ensure it stays in place during cooking and covers the chicken completely. Tuck the ends underneath to prevent unraveling, and place seam-side down initially to help seal the wrapping naturally during the first part of cooking.
Storage: Store leftover bites in the refrigerator for up to 3 days in an airtight container.
