This vintage recipe earned its playful name in 1954 when a teenager entered it into a Pillsbury baking contest, claiming the cake was so irresistible it helped her attract boys’ attention. The original recipe took second place in the competition and has been a beloved coffee cake ever since, appearing in countless cookbooks and food blogs.

The magic of this cake lies in its perfect balance of textures – a tender, moist crumb studded with juicy blueberries, all topped with a crispy cinnamon-sugar coating that adds just the right amount of sweetness and crunch.

It’s equally perfect for breakfast, brunch, or an afternoon snack, though don’t be surprised if it disappears quickly once people catch a whiff of it baking.

How to Make Blueberry Boy Bait

    1. Prepare: Heat oven to 350°F. Grease and flour a 9×13 inch pan. Mix flour, baking powder, and salt in a medium bowl.
    2. Mix Wet Ingredients: Beat butter and sugars until fluffy (2 minutes). Add eggs one at a time, beating after each.
    3. Combine: Alternate adding flour mixture and milk in this order: ⅓ flour, ½ milk, ⅓ flour, remaining milk, remaining flour. Mix well after each addition.
    4. Add Blueberries: Toss berries with 1 teaspoon flour, fold into batter. Spread in pan.
    5. Top & Bake: Scatter blueberries on top. Mix cinnamon and sugar, sprinkle over batter. Bake 45-50 minutes until toothpick comes clean.
    6. Cool & Serve: Let cool 20 minutes in pan. Turn out onto serving platter (topping up). Serve warm or at room temperature. Stores 3 days at room temp or 6 days refrigerated.

    Recipe FAQs

Can I use frozen blueberries instead of fresh?

Yes, but don’t thaw them first. Toss frozen berries with flour and fold them in while still frozen to prevent color bleeding.

Why is my cake sinking in the middle?

This usually happens from opening the oven door too often or underbaking. Keep the door closed for the first 40 minutes and check that your baking powder is fresh.

Can I make this recipe ahead of time?

Absolutely! Blueberry Boy Bait stays fresh for a few days when stored in an airtight container at room temperature. You can also freeze it for longer storage—just wrap it tightly and thaw it when ready to serve.

Can I substitute other fruits for the blueberries?

Yes! While blueberries are classic, you can easily swap in raspberries, blackberries, or chopped strawberries. Just make sure the fruit is roughly the same size for even baking.

    Expert Tips

    • Don’t overmix: Overmixing the batter can lead to a dense cake. Stir just until the ingredients are combined for a light, fluffy texture.
    • Add a pinch of salt: A small pinch of salt helps to enhance the sweetness of the blueberries and balances the flavors in the cake.
    • Use room temperature ingredients: For the best results, ensure your butter, eggs, and milk are at room temperature before mixing. This allows for smoother blending and a better rise.
    • Let it cool slightly: Allow the cake to cool for about 10-15 minutes before serving. This helps it set, making it easier to slice and enjoy.
    • Even Distribution: Gently fold berries in different directions to spread them throughout the batter.

    Serving Suggestions

For the perfect serving experience, try Blueberry Boy Bait warm with a dollop of freshly whipped cream or a scoop of ice cream for an indulgent dessert.

You can also drizzle it with a simple glaze made from powdered sugar and milk to add a touch of sweetness.

If you’re enjoying it as a snack or breakfast, pair it with a cup of coffee, tea or a sugar cookie latte for a cozy treat.

    Storage Tips

To store your cake, keep it in an airtight container at room temperature for up to 2 days to maintain its softness and flavor. For longer storage, place it in the refrigerator, where it will stay fresh for up to 5 days.

If you want to save it for later, slice the cake into portions, wrap each piece tightly in plastic wrap, and store them in a freezer-safe bag or container. Frozen slices can last up to 3 months—just thaw at room temperature or warm them up in the microwave or oven for a fresh-from-the-oven taste.

    Ingredients

    For the Cake:

    • ¾ cup packed light brown sugar
    • ½ cup granulated sugar

    For the Topping:

    • ½ cup fresh or frozen blueberries
    • ¼ cup granulated sugar
    • ½ teaspoon ground cinnamon

    Instructions

    • Heat oven to 350°F. Grease and flour a 9×13 inch pan. Mix flour, baking powder, and salt in a medium bowl.
    • Beat butter and sugars until fluffy (2 minutes). Add eggs one at a time, beating after each.

    • Serve warm or at room temperature. Stores 3 days at room temp or 6 days refrigerated.

    Notes

    • This recipe is typically baked in a 9×13-inch pan, which allows the cake to cook evenly and gives it a nice thickness. You can also use two 8×8-inch pans if you want to split it into smaller portions.
    • A subtle cinnamon-sugar topping adds warmth without overpowering the blueberries.
    • Adjust the sugar to suit your taste—ideal for those who prefer desserts that aren’t overly sweet.
    • This cake travels well and makes a thoughtful homemade gift for friends or neighbors.

This is a very moist dense cake. I loved the texture. But my question to you is, how did you come up with the name? Blueberry Boy Bait?

It’s a recipe from the 1950’s and a gal entered into a fair and won, the name was because it got her all the boys. The story is an old New England tale I think.
