    Easy Crushed Lemon Drop Sugar Cookies

    Crushed-Lemon-Drop-Sugar-Cookies-2

    This is a sweet, lemon-bar-tart cookie drizzled with a lemon glaze while warm for an added burst of flavor. If you’re looking for a quick and easy to make cookie that uses a cookie mix to speed up the process, you’re going to love this one. This recipe is featured this month on the Betty Crocker website.

    Easy Crushed Lemon Drop Sugar Cookies

    Ingredients

    • 1 package Betty Crocker Sugar Cookie Mix
    • 1 egg
    • ⅓ cup butter softened
    • 15 Lemon Drops crushed
    • 1 tablespoon Lemon Juice
    • 1 teaspoon Lemon Zest

    Glaze:

    • 1 cup powder sugar for glaze
    • 4 teaspoons lemon juice for glaze

    Instructions

    • Combined cookie ingredients and bake according to package instructions. Remove cookies from oven when edges begin to brown and center is set.
    • Let rest on cookie tray for 5 minutes then remove to cooling rack and drizzle/spread glaze on each cookie while still warm.

      I really love your recipies have tried several–the rest will be in my recipe box waiting for me to make. However, I have found that many of your cookie recipies do not have the number of cookies that the recipe makes. When I bake cookies I share whatever I make with my family & friends, so it is essential that I know how many cookies that recipe makes. Could you please add that information to your recipies? I would really appreciate it. Thanks for sharing your yummy recipies with us!

        Hi Paulette – a great suggestion. You’re right, I have been a slacker in doing that. Sometimes they get gobbled up so quickly around here, it’s hard to keep track. 🙂 If you make a batch, please leave a comment on that post and let me know. Generally most my cookie recipes make 2 1/2 dozen cookies. I’ll try to do better. Thanks!

      I’m mixing up a batch right now. I do have a question for you… the package calls for the addition of an egg and either I’m doing something wrong or it needs more liquid. Help please! 🙂

      I’m so glad you’re still posting cookie recipes, Barbara! I adore those lemon candies. What a super idea to incorporate them into cookies and then use fresh lemon juice as well. Can this recipe be any easier?? I love it!
