    A roundup of delicious, better-for-you meals with lots of vegetables to help you eat better in the new year.

    It’s a brand new year and many of us have made a resolution to eat better. My resolution every year is to eat more veggies. I’m not a huge vegetable lover, but when you add vegetables with other ingredients in a fabulous sauce or soup, I don’t mind eating my veggies at all.

    I asked some of my talented food blogger friends to share with me their favorite recipes for healthy one pot meals with extra veggies. I can’t wait to try these delicious recipes, and I’m happy to be able to share them with you too.

      I much prefer extra veggies to extra meat and it has nothing to do with health, I just like a variety of vegetables with every meal. I also love one pot meals – perfect for our busy lives.
