Pumpkin Chocolate Chip Cookies

It’s already week 9 of my 12 weeks of Christmas Cookies! Only 27 more days until Christmas! Have you started your shopping yet?

This week I called my sister and asked her if I could share her Pumpkin Chocolate Chip Cookie recipe on my blog. My sister is a wonderful cook and this is one of her family’s favorite cookies. It is a delicious, soft, moist, cakey cookie. Her recipe makes 5 dozen cookies. She often doubles that and freezes the dough so that she can have fresh, hot cookies ready in a flash for friends and family.

The recipe calls for shortening. My sister has tried using butter instead but the cookie sets up better with the shortening. Also, be sure and bake the cookies completely before removing them from the oven. Enjoy!

PumpkinChocolateChip

Pumpkin Chocolate Chip Cookies

1 cup shortening
3 cups sugar
4 eggs
2 teaspoons vanilla
2 cups canned pumpkin
5 cups flour
2 teaspoons salt
2 teaspoons baking soda
2 teaspoons nutmeg
2 teaspoons cinnamon
1 12-oz.package chocolate chips

Preheat oven to 375º. Mix the wet ingredients together in a large bowl. In a separate bowl mix the dry ingredients together. Add the dry ingredients to the wet ingredients and mix well. Add chocolate chips. Bake 12 – 15 minutes.

3 weeks eh? Why so you're right! Amazing how fast time has gone by. Luckily, I don't need to Christmas shop! Wonderful cookies. Cakey cookies are nice change from soft and chewy.

Hard to believe that it's week 9 already, isn't it? These cookies look like wonderful little fluffy pillows. You can really tell that they are soft, moist and chewy. I'd love to try this recipe.

I am seeing that pumpkin is much more than I thought it was, as everyone geared up for Halloweed and Thanksgiving. Pumpkin just goes into everything and comes out delicious.

With all that I have made, I don't think I have made drop cookies. I did make bars. Although, they are cookies, I see bars as distinct from drop or shaped cookies.

These look delicious and I can see making them.

They look fabulous Barbara! If you like pumpkin cookies, try the ones on my blog, they use cinnamon chips and are soooo yummy!!

that's one substantial looking cookie! i'm more of a pumpkin w/cream cheese kind of fan...unless we're talking about pumpkin choc chip pancakes...but i am sure these are great :)

Interesting with the pumpkin in the cookie. I'm pretty sure it would taste great, although can't really imagine the flavours very well.

Beautiful cookies and I like it that they are nice a fat too.

I know that some cookies just don't bake up right if you use all butter. You might want to try making them with a good quality margarine. They should still set up nicely but the margarine will add some flavor as well.
