Chunky Biscoff White Chocolate Chip Cookies

The new Biscoff Spread Crunchy with chunks of caramelized Biscoff cookies in the spread adds a rich, lightly spicy twist to a traditional oatmeal cookie. I added white chocolate chips for a little extra sweetness and a great, chunky texture.

Some times things just fall in to place. Biscoff sent me a jar of their new Crunchy Spread; the lacrosse team needed someone to bring cookies to the team pasta party; and when I was looking through Cookie Cravings (Maria’s new eCookbook), Maria had a recipe for Biscoff Oatmeal Cookies.

I’m so glad I gave this recipe a try. My husband especially loved these cookies. He gave it a rave review, “Now that’s a good cookie.” If you haven’t checked out Maria’s, Two Peas and Their Pod, new eBook all about cookies, Cookie Cravings, you should. It’s filled with great cookie recipes.

And if you haven’t checked out the new Biscoff Spread Crunchy, you need to pick up a jar.  It’s delicious in these cookies, but even more so just right off the spoon.

Here’s my version of Maria’s Biscoff Oatmeal Cookie recipe. I changed it up a bit so that the Biscoff Spread chunks would stay chunky.

Chunky Biscoff White Chocolate Chip Cookies

Chunky Biscoff White Chocolate Chip Cookies

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Biscoff Spread Crunchy
  • 1 1/2 cups old fashioned oats
  • 1 cup white chocolate chips

Directions

  1. Preheat the oven to 350 degrees F. Line baking sheets with parchment paper or a silicone mats.
  2. In a small bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In the bowl of a stand mixer, add the butter, sugar, and brown sugar and beat on medium speed until fluffy. Add the egg and vanilla and beat until smooth.
  4. Reduce the mixer speed to low and mix in Biscoff spread just until blended. Add the dry ingredients, mix just until blended. Mix in oats and chocolate chips just until evenly distributed.
  5. Form the cookie dough into rounded tablespoons and place them 2 inches apart on the baking sheet. Bake for 8 to 10 minutes or until cookies are golden and just firm around the edges. (The center will not be set.) Let the cookies cool on the baking sheet for 5 minutes and then remove with a spatula onto a cooling rack.

    Thanks so much for the comment on Cookie Madness. Also, I’ve been meaning to tell you I saw these Biscoff cookies on Pinterest and am planning on giving them a try. I only have the the crunchy type of Biscoff, but I don’t see why it wouldn’t work.

    I need to get Maria’s book – I just love her cookies! I had no idea that Biscoff had a crunch spread – oh my…I didn’t need to know that:-). These sound amazing…the white chocolate goes perfectly with Biscoff.

    No fair! I want Biscoff to send me a few jars! ;) I’m lucky enough that I was given a gift card to their site and I ordered their pearl sugar waffles — sooo yummy, as well as jars of smooth and crunchy spread. Have you tried making truffles with it yet?? I made some for Valentine’s Day and sprinkled with crushed Biscoff cookies. Delish!

    I FINALLY found some Biscoff spread at World Market:) We love it~my husband is especially head-over-heels enamored with it! I’ll have to try these cookies, and check out the e-book too.

    I love the texture of these cookies! And I love Biscoff and white chocolate. I made some Biscoff white chocolate brownies last week but they weren’t nearly Biscoff-y enough. I’m sure these are way better. :)

    I have been waiting for Chunky Biscoff to appear on the grocery shelves! Pairing Biscoff with white chocolate in an oatmeal cookie makes for a very tempting cookie! My family will definitely enjoy this recipe.

    MMmm – we have Biskoff (speculoos) spread here but not yet the chunky version which sounds great! The cookies look delicious! Great flavors together.

    Uh oh; I’m in trouble. I haven’t had the chunky spread and it sounds even better than the stuff I simply can not keep a spoon out of when it’s in the house! These look and sound amazing…and thanks a bunch for including mine too. Definitely a Biscoff addict here!

    I only just discovered Biscoff myself and I’m embarrassed to admit that I’ve eaten pretty much an entire jar with just a spoon. Guess I’ll have to pick up another jar so I can try these cookies!

    Funny! I made this recipe first thing when I bought Maria’s book…AND added white chocolate chips. Match made in heaven. And I have to try this chunky spread. Yum!
