    Very Berry Crumble Bars
    We have been dieting at my house lately. Well actually my husband has been pretty good about dieting lately, but I haven’t been baking much. When my son asked me to make cookies I told him no. 🙁

    But the next day I saw this quick and easy recipe for Very Berry Crumble Bars on Megan’s Munchies and I thought it was a good compromise. Well, at least it had fruit and oats in it. The recipe does have a cup of oil in it, but I think next time I’ll try it with less oil. It makes a 9×13 pan of cookies, so I cut them up into bars and after we each had one, I froze the rest.

    I really didn’t plan on eating any more, but some how every night around 8:00 I just couldn’t resist these delicious bars! I think they may be addicting! Although one bar did seem to satisfy my sweet tooth. Especially when I warmed it up in the microwave and topped it with a little Cool Whip. It was Light Cool Whip though, so really I was being good, right?

    Very Berry Crumb Bars

    Prevent your screen from going to sleep

    Ingredients

    • 1 pkg. yellow cake mix
    • 2 cups oats
    • ½ cup brown sugar
    • 1 cup canola oil
    • 1 egg
    • ¾ cup strawberry ice cream topping
    • ¾ cup blueberries

    Instructions

    • Mix the cake mix, brown sugar and oats together. Add the oil and the egg and mix well. Pat half of the dough into a prepared 13 x 9-inch pan. Spoon the strawberry topping over the dough, and top with the blueberries. Crumble the rest of the dough over the topping and blueberries.
    • Bake at 350 degrees for 30 to 35 minutes. Cool and cut into bars.

      Oh sure, it is the low fat cool whip that makes it OK for me to eat the entire tray of these goodies:) Kidding here as we are all dieting this summer and I have lost 9 pounds and thought I would have lost more but for some reason my metabolism must have died:)

      These just came out of the oven… I used a raspberry filling instead of the strawberry ice cream topping. Used 1/2 c. cinnamon applesauce and 1/2 c. oil. 1st taste was a good one!

      These look scrumptious and good on you and your family for going on a health spree! Using light cool whip is definitely a good step! It's like having Diet Coke or mineral water with fried chicken. I know people chuckle but it does help doesn't it 😛
