A bar cookie made in a cast iron skillet. The middle is soft and loaded with gooey chocolate and peanut butter chips, a perfect contrast to the crispy, chewy edges.
We’re still in love with the skookie at our house. You use half the batter of a traditional cookie, so it comes to together quickly and cooks up in half the time of thicker bar cookie recipes. Perfect for those nights when your sweet tooth comes calling.
You don’t even have to worry about spreading the dough all the way to the edges of the pan. In fact, it’s really better if you don’t since the cookie will spread as it cooks.
I used smooth peanut butter in this recipe, but you could also use chunky peanut butter. Or maybe even better, stir some finely chopped peanuts in to the batter along with the chips.
To serve, I like to use a pizza cutter to cut it in to wedges. If you like peanut butter cookies, you’ll love this peanut butter chocolate chip skillet cookie. I know I do.

Hi Barbara,
This sounds like a great cookie recipe…the peanut butter being the clincher! I don’t have an oven-safe skillet, and wondered if this recipe would work in a baking dish or baking pan?
Thank you,
Art W

Thanks Art. I haven’t tried it but I think either would work well. Cook it until the center is set and pulls away from the sides. Let me know how it goes.
Janet
Do you think I could make this in a 10″ cast iron skillet? Thank you!
Barbara Schieving
Hi Janet – yes, that should work fine. You may have to reduce the cook time.

I just tried this recipe as written except did not grease the pan with the extra 2 tablespoons of butter. I coated the bottom of the cast iron skillet with a thin layer of butter. The cookie baked up just fine with crispy and chewy edges. That extra butter is not necessary for success. It is delicious!
Barbara Schieving
So glad you enjoyed it. Thanks for the tip.

Just had to tell you that this is absolutely fantastic!!! I am a baker, and a very picky baker. I doubled this recipe and baked it in a 12″ skillet, and it was the best cookie I have had in years. Can’t wait to try more of your recipes!

Thanks Kelley! My daughter is addicted to the skookie.

Barbara, thank you for this wonderful recipe. It’s one of the best new recipes I’ve found in a long time. Tip for others who don’t have a skillet: I used a ceramic pie pan and it turned out perfect!!
Barbara Schieving
What a great tip. I’ll have to try using a ceramic pie pan. Thanks!

What a beautiful skookie! I don’t know why cooking desserts in a skillet always makes it taste so much better, but it does. Great looking cookie, love the peanut butter!

What a perfectly done skookie! I’ve always wanted to make one but at the same time, very afraid that I’ll eat the whole thing before I kids get home to share! hahaha…Okay, maybe I should make one on the weekend so they are home to help out, just to be safe. 🙂 Wish you a happy Friday and a beautiful weekend ahead.

I will make this for son and his friends. I always make a chocolate chip blondie in one big pan when i want chocolate chip cookies but don’t want to spend an afternoon standing by the oven and scooping out sticky dough. This looks perfect for me and delicious to boot! Son and his friends will love it! (So will I)
Deborah
I would seriously be tempted to eat this whole thing myself!
