How To Make Brownie Cake Pops
Step 1: Preheat oven to 350°. Prepare brownies as directed on box, using the recommended oil, water and eggs for fudgy brownies. Pour batter in to a 9×9 pan sprayed with non-stick cooking spray. Bake 28–30 minutes until edges are firm and middle is set. Allow to cool for at least one hour.
Step 3: Remove cooled brownies from the pan and trim off the edges. Crumble the remainder of the baked brownies in to a large bowl.
Use a 1 ½-inch cookie scoop to scoop brownies in to balls. Use your hands to smooth out the balls and place on a baking sheet lined with waxed paper, parchment paper or a Silpat. Insert a lollipop stick in to each brownie ball. Freeze at least 2 hours.
Step 3: In a microwave safe dish, heat Dove chocolate and shortening on 50% power for 1 minute; stir. Continue microwaving and stirring in 30-second intervals on 50% power until melted and smooth.
Step 4: Dip a pop in to the melted chocolate. If necessary, use a spoon to completely coat the pop with chocolate, then remove it letting the excess chocolate drip back into the bowl. Place on prepared baking tray.
Scatter sprinkles on the top of the pop while the chocolate is still wet. Repeat with remaining pops. If the chocolate starts to get thick as it cools down, just microwave for 15 seconds. Put the baking tray in to the fridge until ready to serve.

Recipe FAQs
Absolutely! If you have a favorite fudgy brownie recipe, feel free to substitute it. Just make sure your brownies are moist and fudgy rather than cakey, as this helps them hold together better when rolled into balls.
Freezing is crucial as it firms up the brownie balls, making them much easier to dip without falling apart. The cold brownie also helps the chocolate coating set more quickly and evenly.
Definitely! While the recipe calls for Dove dark chocolate, you can experiment with milk chocolate, white chocolate, or even colored candy melts for themed occasions.
When stored properly in an airtight container, these treats will keep in the refrigerator for up to one week. You can also freeze the undipped brownie balls for up to three months.

Expert Tips
- Trim Those Edges Generously: Don’t be shy about cutting away the crusty edges of your brownies. The softer center portions create the smoothest, most cohesive cake pop texture.
- Chill Between Steps: If your kitchen is warm or you notice the brownie balls becoming soft while working, pop them back in the freezer for 10 minutes before continuing with the dipping process.
- Double-Dip Technique: For an extra-thick chocolate shell, let the first coating set for about 30 seconds, then dip again for a professional-looking finish that’s less likely to crack.
- Stick Strategy: Insert the lollipop sticks about halfway into each brownie ball for the best stability. If you’re struggling with loose sticks, dip the end of each stick in melted chocolate before inserting it into the brownie ball.

I made this following the box brownie recipe and they were so oily when I broke them all up. I found out from a professional baker that you shouldn’t use any oil in any type of cake pop either brownie or cake, you should always substitute equal amounts of butter instead because it makes it denser and there isn’t a ton of oil everywhere. So I tried it and they turned out amazing. The candy melts wouldn’t stick to my original ones made with oil which is why I looked to see if I did something wrong and I found that all out. Other than the oil part everything worked out great once I changed altered the recipe.

I recently made this recipe for my daughter’s 5th birthday. They were a hit!!! My only suggestion is make them smaller than you think… we used a cookie scooper and they were so big we only fit 5 on a 15 cake pop stand which created issues and elongated the process of making them. Overall though the cake pops were delicious and everyone raved about them!!
