These quesadillas are best served fresh, but you can store them in an airtight container or wrap them in tin foil and keep them in the fridge for up to 4 days. Reheat the quesadillas on the stove over low-medium heat or in the microwave. Alternatively, if you have all the ingredients prepped, you can store them in the fridge separately, ready to assemble any time!

Breakfast Quesadillas Recipe
Ingredients
- 8 flour tortillas
- 1 pound brekfast sausage, cooked
- 6 large eggs scrambled
- 1 cup shredded cheddar cheese
- salsa for serving, optional
Instructions
- If you haven’t already, cook your sausage and eggs.
- Top a tortilla with ¼ of the sausage, eggs, and cheese. Transfer the tortilla to a pan over medium-high heat and top with another tortilla.
- Cook your quesadilla for about 3 minutes per side, or until golden brown.
- Serve immediately with optional salsa and enjoy!
