Bun length beef hot dogs stuffed with creamy gouda cheese wrapped in bacon and slathered in tangy BBQ sauce, then grilled until the hot dog is sweating, the cheese is melty, the bacon is crisp and the BBQ sauce is sticky and caramelized.

One of my most popular posts in the summer is my Bacon Wrapped Cheese Hot Dogs. The recipe is super easy, super tasty and a fun way to change up hot dogs for the summer barbecue season. This recipe takes the Bacon Wrapped Cheese Dog to the next level.

Someone left a comment on my Bacon Wrapped Cheese Dog post suggesting adding BBQ sauce before grilling the dogs. It sounded like a brilliant idea to me, so over the Memorial Day weekend we grilled some BBQ Bacon Wrapped Cheese Hot Dogs that were fantastic.

Hungry to eat these hot sticky, cheesy hot dogs, I forgot to toast the buns. However, I intentionally didn’t add anything else to the dog. These hot dogs are so loaded with flavor, they really don’t need anything else on the bun.

Give them a try at your next barbecue. You’ll be glad you did.

    Ingredients

    • 8 hot dogs
    • 8 slices of gouda cheese
    • 16 slices bacon pre-cooked
    • ½ cup BBQ sauce
    • 8 hot dog buns toasted

    Instructions

    • Preheat grill to low.
    • Slice each hot dog lengthwise down the middle almost, but not all the way through. Fill the pocket with cheese. (I used Kerrygold Blarney Castle Gouda.)
    • Wrap the hot dog with two slices of thin-sliced, pre-cooked bacon. Secure bacon with toothpicks. (I used thawed Costco Hormel frozen fully cooked bacon.) Baste with your favorite BBQ sauce. (I used KC Masterpiece.)
    • Grill on all four sides starting with the cheese facing down. (The bacon holds the cheese in place.) Grill until bacon is crisp, the hot dog is sweating and the cheese is melty.

Just wondering how you wrap this with precooked bacon, looks raw in photos?

The precooked bacon is really tender! It’ll crisp up when you cook it again.

These look soooooo naughty, but so delicious!!!! I love that you served them with cornichons! A nice little zing to cut through the deliciously rich meat!
