Why I Love Making Sweet and Sour Meatballs

You probably have everything for this recipe already in your kitchen. Ground beef, breadcrumbs, brown sugar, ketchup, soy sauce, and vinegar when combined create a sweet-and-tangy flavor—no special ingredients or extra grocery runs needed.

The balance of flavors makes these meatballs a hit with both kids and adults. Whether it’s a family dinner or a potluck, they disappear fast and always get rave reviews.

Serve them over rice or noodles for a hearty meal, on a platter with toothpicks for an easy appetizer, or tucked into sub rolls for a fun twist. You can even make the meatballs and sauce ahead of time—just combine and reheat when you’re ready to serve for a quick, no-stress meal.

If my sauce becomes too thick, I add water one tablespoon at a time; if it’s too thin, I let it simmer for a few extra minutes until it thickens to the perfect consistency.

I toss the meatballs in the sauce as soon as they come out of the oven so the sauce coats them perfectly and the flavors blend together.

    Ingredient Notes

Ground beef: Use 80/20 ground beef for juicy, flavorful meatballs, but 85/15 or even 90/10 will work if you prefer leaner meat.

Italian bread crumbs: These add extra seasoning and help bind the meatballs together. If you only have plain breadcrumbs, just add a teaspoon each of onion and garlic powder to boost the flavor.

Brown sugar: Light brown sugar gives the sauce its signature sweetness and creates that beautiful glossy finish. Dark brown sugar works too if that’s what you have on hand.

Apple cider vinegar: This provides the tangy punch that balances the sweetness perfectly. You can substitute white vinegar or rice vinegar in a pinch, though the flavor will be slightly different.

Soy sauce: Regular soy sauce works perfectly, but low-sodium is great if you’re watching your salt intake. Tamari is a good gluten-free alternative that keeps the same savory depth.

Cornstarch: This is what thickens the sauce to that perfect, spoon-coating consistency. Make sure to whisk it in completely to avoid any lumps as the sauce heats up.

    Easy Sweet and Sour Meatballs

This Sweet and Sour Meatballs recipe is one I learned from my grandma, who made it for every family gathering. Her secret was keeping the sauce perfectly balanced—just the right mix of tangy and sweet!

    Ingredients

    Ingredients (meatballs):

    • 1 pound ground beef
    • ¾ cup Italian bread crumbs
    • 1 large egg
    • 1 ½ teaspoons salt

    Ingredients (sauce):

    • ¾ cup light brown sugar
    • ¾ cup water
    • ¾ cup ketchup
    • ⅓ cup apple cider vinegar
    • ¼ cup soy sauce
    • 3 tablespoons cornstarch

    Instructions

    • Preheat the oven to 350°F.
    • Combine the ground beef, breadcrumbs, egg, salt, garlic powder, and minced onion in a large mixing bowl using your hands.
    • Once the ingredients are thoroughly combined, divide the meat mixture into 15 evenly shaped balls and place them on a baking sheet lined with parchment paper.
    • Cook your meatballs for 20 minutes in the oven, or until they reach 165°F.
    • While the meatballs are cooking, prepare your sauce by using a small whisk or fork to combine all of the sauce ingredients in a small pot over medium heat. Stir the sauce for about 5 minutes, or until it begins to thicken.
    • Toss your meatballs in a medium sized bowl with the sauce to evenly coat them.
    • Serve and enjoy!

    Notes

Breadcrumb Substitution: Plain breadcrumbs work just fine when seasoned with a teaspoon each of onion powder and garlic powder mixed into the meatball ingredients.
Proper Mixing: Thoroughly combine all meatball ingredients to create a cohesive mixture that maintains its shape during cooking and prevents the meatballs from crumbling.
Sauce Thickness Test: The sauce has reached the perfect consistency when it clings to the back of a spoon without immediately running off.
Avoiding Lumps: Whisk the cornstarch completely into the sauce ingredients to prevent clumps from forming as the mixture heats and thickens.
Mixing Alternatives: A large spoon or fork can replace hands for combining the meatball mixture, though this method requires more time and effort.
Uniform Portioning: A cookie scoop creates perfectly sized, evenly shaped meatballs in a fraction of the time it takes to roll them by hand.

How To Make Sweet and Sour Meatballs

A flat lay of nine ingredients for sweet and sour meatballs in small bowls on a marble surface, featuring ground meat, breadcrumbs, brown sugar, ketchup, melted butter, Worcestershire sauce, an egg, salt, and pepper.

Step 1: Preheat the oven and line a baking sheet with parchment paper. Gather all of the necessary ingredients.

A glass bowl with ingredients for sweet and sour meatballs—ground meat, bread crumbs, an egg, and seasonings—sits on a marble surface alongside bowls filled with yellow liquid and empty white bowls.

Step 2: Use your hands or a wooden spoon to combine the ground beef, bread crumbs, salt, and egg in a mixing bowl until thoroughly combined.

A baking sheet lined with parchment paper holds fifteen raw sweet and sour meatballs evenly spaced in rows. A small bowl with a yellow liquid sits in the upper left corner, all set on a white marble surface.

Step 3: Divide the meatball mixture into 15 evenly shaped balls and place them on the baking sheet. Cook your meatballs until they reach an internal temperature of 165°F.

A glass bowl filled with sweet and sour meatballs coated in a reddish-brown sauce sits on a marble countertop, surrounded by empty white bowls and a small dish with red sauce.

Step 4: While the meatballs are in the oven, whisk the brown sugar, water, ketchup, apple cider vinegar, soy sauce, and cornstarch together in a small pot over medium heat. Stir the sauce until it has thickened. Toss the meatballs in the sauce until evenly coated.

A rectangular white plate holds ten sweet and sour meatballs topped with chopped green onions, arranged neatly on a marble surface. A gold fork, extra green onions, and a green-checked napkin are nearby.

FAQs for Sweet and Sour Meatballs

Can I use ground turkey or chicken instead of beef?

Yes, ground turkey or chicken work wonderfully in this recipe. Just note that leaner meats may produce slightly drier meatballs, so consider adding a tablespoon of olive oil to the mixture for extra moisture.

How do I prevent my meatballs from falling apart?

Make sure to thoroughly mix your ingredients so the egg and breadcrumbs bind everything together. Also, avoid moving the meatballs around too much while they’re cooking, and let them rest for a minute after baking before tossing in sauce.

Can I make these meatballs in a slow cooker?

Yes, brown the raw meatballs in a skillet first, then transfer them to your slow cooker with the sauce. Cook on low for 4-5 hours or high for 2-3 hours until cooked through.

A golden fork holds up a sweet and sour meatball in focus, with a white plate of more glazed sweet and sour meatballs garnished with chopped green onions blurred in the background.

My Best Tips for Making Sweet and Sour Meatballs

☞Even Sizing is Key: Use a cookie scoop to portion your meatballs so they all cook evenly and finish at the same time.

☞Don’t Skip the Thermometer: Always check that meatballs reach 165°F internally to ensure they’re perfectly cooked and juicy.

☞Sauce While Hot: Toss the meatballs in sauce immediately after baking so it adheres better and the flavors soak in.

What to Serve With Sweet and Sour Meatballs

These meatballs pair beautifully with white or brown rice, lo mein noodles, fried rice, or cauliflower rice for a low-carb option. Steamed jasmine rice works particularly well since it allows the bold sweet and sour flavors to shine through.

Add steamed broccoli, snap peas, or green beans to complement the tangy sauce, or serve a cucumber salad or Asian-style coleslaw for refreshing crunch. You can even serve these as an appetizer with toothpicks for parties, or pile them into sub rolls with extra sauce for a fun meatball sandwich twist.

    Storage & Reheating Tips

Store leftover sweet and sour meatballs in an airtight container in the refrigerator for up to 5 days, keeping the meatballs and sauce together so they continue to absorb flavors. For longer storage, freeze cooled meatballs in a freezer-safe container for up to 3 months, then thaw overnight in the refrigerator before reheating.

Reheat in the microwave for 45-60 seconds, stirring halfway through, or warm on the stovetop over medium-low heat with a splash of water if needed. The flavors often taste even better the next day after the meatballs have soaked up more of that tangy-sweet sauce.
