Did you know that tomorrow is Pi Day – March 14 (Pi is 3.14). I love to celebrate Pi Day because it’s a good excuse to eat one of my favorite desserts – Pie!

Here’s a roundup of the best pies for Pi Day on Barbara Bakes and around the web to help you celebrate too.

Pie doesn’t have to be complicated these easy-to-make, bite-size lemon cheesecake bites are the perfect mini pies. 

I fell in love with chess pie last year. This tart Lemon Blackberry Chess Pie with a bright lemon flavor, a layer of blackberries on the bottom and dollops of blackberries swirled on top is the reason.

My husband can’t get enough of this Creamy Lemon Yogurt Pie in a crisp graham cracker crust. The easy-to-make lemon filling gets it’s creamy texture and a little extra tang from the addition of Greek yogurt.

A tart, creamy key lime pie with a graham cracker crust crowned with a light as air meringue and served with a sweet mango sauce. You can buy a pre-made crust if you’re short on time.

Super easy to make, fun Mint Chocolate Chip Pie. Made with a pre-made Oreo crust and store bought Mint Chocolate Chip ice cream.

A fun twist on coconut cream pie. This Almond Joy Pie, has a chocolate crumb crust with a luscious, creamy coconut filling drizzled with hot fudge.

Pecan Pie Cookies from Spend With Pennies would be a big hit at my house and they’d be so easy to make.

Another cookie pie that would be a hit at my house, Reese’s Peanut Butter Marshmallow Cookie Pie from Oh Sweet Basil.

Banoffee Pie is on my must try list. This one from the Brown Eyed Baker is made with a graham cracker crust, sliced bananas, dulce de leche, coffee whipped cream and topped with chopped peanuts.

Pie doesn’t have to be sweet. Often I’ll make a pizza pie or chicken pot pie. I thought these Savory Hand Pies from The Little Kitchen would be fun to make with the kids.
