    Chocolate brownie cookies are soft, rich and have the most tender texture. I love these because they are super easy and quick to make and they taste so yummy.

    Chocolate Brownie Cookies

    The best part of brownies like the crinkly top, chewy center, crispy edges and the chocolatey goodness are ever present in these cookies. It is the best of both worlds and so easy to make as well. 

    Make sure you line your baking sheets with parchment paper or a silicone baking mat. These cookies tend to stick, so for easy clean up prep those pans. 

    I love these cookies for a fun after school snack or for a quick dessert. Since these are so simple to make, your kids will love to help out with these delicious cookies too.

    Ingredients

    • Semi-sweet chocolate chips
    • Butter
    • Brown sugar
    • Granulated sugar
    • Eggs
    • Vanilla
    • Flour
    • Cocoa powder

    Recipe Instructions

    1. Microwave chocolate chips and butter.
    2. Place the chocolate in a large mixing bowl and let it cool.
    3. Add the brown sugar and granulated sugar and stir until combined.
    4. Add the eggs and vanilla and beat until light and fluffy.
    5. Add the flour, cocoa powder, salt, and baking powder and stir to combine. Chill the dough for 30 minutes.
    6. Preheat the oven to 350 degrees F
    7. After the dough has finished chilling scoop it to 1.5 tablespoon balls and roll them in clean hands to make them very round.
    8. Bake the cookies for 12-13 minutes.
    9. Remove from the oven and allow to cool on the pan for 5 minutes before transferring to a wire rack to finish cooling.

    Do chocolate brownie cookies need to be chilled?

    I like to chill these cookies in the refrigerator for a quick 30 minutes if you have the time. This will eliminate the spread and will solidify them better. Worth the extra time. 

    How do I know when chocolate brownie cookies are done baking?

    You will know when the cookies are done baking because they will start to look shiny on top and begin to crinkle. Allow them to cool for a few minutes on the baking sheet before transferring them to a cooling rack. 

    Should I use salted or unsalted butter when making cookies?

    Professional bakers usually use unsalted butter because you can more easily control the salt content going into the cookie. If a recipe doesn’t specifically say which type of butter it is implied that you use unsalted.

    Ingredients

    • ½ cup semi-sweet chocolate chips
    • ¼ cup butter
    • ½ cup brown sugar
    • ½ cup granulated sugar

    • ¼ cup cocoa powder
    • ¼ teaspoon salt
    • 1 teaspoon baking powder

    • In a microwave safe bowl add the chocolate chips and butter and microwave in 30 second intervals, stirring after each interval, until the chocolate is fully melted. You can also do this over a double boiler if you prefer.
    • Place the chocolate in a large mixing bowl and let it cool for 5 minutes.
    • Add the brown sugar and granulated sugar and stir until very well combined.
    • Add the eggs and vanilla and beat until light and fluffy, about 3 minutes.
    • Add the flour, cocoa powder, salt, and baking powder and stir to combine. Chill the dough for 30 minutes.
    • Preheat the oven to 350 degrees F. and line a baking sheet with parchment paper or a baking mat.
    • After the dough has finished chilling scoop it to 1.5 tablespoon balls and roll them in clean hands to make them very round. Place about 2 inches apart on your prepared tray.
    • Bake the cookies for 12-13 minutes, the edges will look set.
    • Remove from the oven and allow to cool on the pan for 5 minutes before transferring the cookies to a wire rack to finish cooling.
