    Apple Blueberry Brown Butter Bliss

    This Apple Blueberry Brown Butter Bliss is a cross between a fruit cobbler and a cake. It’s loaded with fruit on the bottom, but some of the topping seeps down between the fruit. The sugar sprinkled on top before baking gives it a nice crunch, and is the perfect addition to this old fashioned dessert.

    I have been making lots of things with apples lately, but one of my favorites is this Apple Blueberry Brown Butter Bliss.

    I received the sweetest email from a reader, Cheryl from NC. She told me how much she liked my blog and shared a few of her favorite recipes with me. One of her favorites was Browned Butter Bliss with Plums from Dinner With Julie, Sounds heavenly doesn’t it, so of course I needed to give it a try.

    Costco had some big beautiful blueberries, so I decided to make a Blueberry Bliss instead of a plum bliss. I was afraid blueberries might be a bit too juicy for this recipe and make the top soggy, so I used the technique that Cook’s Illustrated uses in their blueberry pie recipe.

    I cooked half of the blueberries to create a sauce, then added the remaining blueberries and apples. It worked perfectly.

    Once you have the fruit cooked, you brown the butter. Browning it gives it sort of a nutty flavor. Watch it closely so you don’t burn it. Then you combine the topping ingredients and pour them over the fruit and finish the top with a sprinkle of sugar.

    Apple Blueberry Brown Butter Bliss

    Ingredients 

    Filling

    • 2 cups fresh blueberries divided
    • ⅓ cup sugar
    • 1 teaspoon lemon juice
    • 1 teaspoon lemon zest
    • Pinch of salt
    • 1 apple peeled and diced

    Topping

    • ½ cup butter
    • ¾ cup sugar
    • 2 large eggs
    • 1 cup all-purpose flour
    • ½ tsp. cinnamon
    • 1 tablespoon sugar in the raw

    Instructions

    • Preheat the oven to 350°F and butter a pie plate.
    • Add 1 cup of blueberries, ⅓ cup sugar, lemon juice, and salt to a saucepan and cook over medium heat until blueberries burst and mixture is thickened.
    • Add remaining 1 cup of blueberries, apple, and lemon zest. Stir to combine. Spread into the pie plate.
    • Prepare Topping: Melt the butter in a small saucepan and keep cooking it, swirling the pan occasionally, for about 5 minutes or until it turns golden. Pour into a bowl. Stir ¾ cup of sugar into the butter, then the eggs, then the flour and cinnamon.
    • Pour over the fruit and sprinkle with raw sugar. Bake for 40-45 minutes, until golden and crusty, and the juices ooze from around the edges.
    • Serve warm with vanilla ice cream, whipped cream or thick vanilla yogurt.

    Notes

    *Instead of the blueberry filling you can substitute – 8 or so plums, thickly sliced, or apricots, or 3 peaches, or 3 tart apples, peeled and thinly sliced + 2 Tbsp. sugar (or to taste, according to the sweetness of the fruit)

      Barbara, CPU problems have kept me away since I first emailed you, so what perfect timing to find this on my return! And how beautifully browned and delicious it looks! My last had plums, nectarines, an apple & strawberries, all w-a-y past their prime, but it was still delicious! So glad you liked the recipe. As for my dream bed, it would be as soft and cozy as my last hospital bed, only much larger and located on an island somewhere, in a bedroom of wood and stone, with a WIDE view of the ocean in front of me, a small waterfall garden beside me, and nothing, not even glass, separating me from the earth, wind and sky! 75 degrees, a light, ocean-scented breeze, BLUE sky spreading forever before me . . . heaven! I saw a room like that once, and it has been my dream ever since.

      Your dessert looks scrumptious. Love that apple peeler, too. Hmm, my dream bed would be a soft, cushy mattress that makes you feel like you're sleeping on feathers. And linens that smell fresh and good, like roses. Or lemons 🙂 You do have a wonderful blog, by the way! There's always something interesting cooking over here.

      My friend, Cherie, of Passing Thru' told me to come and check out your blog! OH, BOY! I LOVE IT! MY dream bed? One I could USE. I cannot sleep lying down because of a shattered knee cap that's unfixable. So I'd use the $60 for something ELSE. Still, how fun! And I am bookmarking this blog 'cause it's terrific!       'Kay… My dream bed would be a King Size Sleigh Bed with the highest thread count sheets you can buy, top of the line feather pillows(at least 4!), a beautiful comforter set & matching wedge so that I could read in bed in pure comfort!

      Yum..browned butter with apples sounds so good. Love that curly apple too. If that doesn't make a kid eat apples, I don't know what will.

      My dream bed would be a super comfortable full-sized all to myself. Yum.
