Immediately transfer them to a kitchen towel and lay them flat to prevent sticking – this step is crucial for easy rolling. If noodles stick together, gently separate them under cool running water and pat dry again.

    Rolling Technique: Spread the cheese mixture evenly but not too thick – about 2-3 tablespoons per noodle works perfectly. Start rolling from one end and keep the roll snug but not too tight, as the filling will expand slightly during baking. If a roll comes apart, simply press it back together with your hands.

    I lightly pierce the cooked noodles with a fork before adding the filling. This creates grooves that help the cheese mixture grip better and prevent sliding during rolling.

    I reserve half a cup of sauce to add after baking for fresh flavor. I nestle each lasagna rollup into the bottom sauce layer to prevent sticking, but don’t over sauce the top to avoid a watery dish.

    Ingredients 

    • 12 lasagna noodles
    • 3 cups shredded mozzarella
    • 1 cup freshly grated parmesan
    • 2 ½ cups ricotta
    • 1 tablespoon Italian seasoning
    • 3 ½ cups marinara sauce (or your favorite pasta sauce)

    Instructions

    • Preheat your oven to 375°F.
    • Cook your lasagna noodles just until al dente, drain them, and pat them dry. Lay them out on a kitchen towel to prevent them from sticking to each other.
    • In a large bowl, stir together 2 ½ cups of mozzarella, ⅔ cup of parmesan, and all of the ricotta.
    • Use a spoon or spatula to spread the filling out over each of the lasagna noodles. Roll each lasagna noodle like you would a cinnamon roll.
    • Cover the bottom of a 9×13 inch baking dish in a thin layer of marinara sauce.
    • Add each of the lasagna roll-ups and cover with the remaining sauce. Sprinkle the top of the dish with the remaining cheese.
    • Cover the baking dish with foil and bake for 35 minutes. Remove the pan from the oven, take off the foil, and bake for an additional 5 minutes.

    Sauce Options: While marinara is classic, try alfredo sauce, pesto, or even a simple butter and herb sauce for variety. Different sauces can completely transform the flavor profile while keeping the same beloved roll-up format.
