My 2 Best Tips For Making Lasagna Roll Ups
Noodle Preparation: Cook the lasagna noodles just until al dente to prevent them from becoming mushy during the rolling and baking process. Immediately transfer them to a kitchen towel and lay them flat to prevent sticking – this step is crucial for easy rolling. If noodles stick together, gently separate them under cool running water and pat dry again.
Rolling Technique: Spread the cheese mixture evenly but not too thick – about 2-3 tablespoons per noodle works perfectly. Start rolling from one end and keep the roll snug but not too tight, as the filling will expand slightly during baking. If a roll comes apart, simply press it back together with your hands.

I lightly pierce the cooked noodles with a fork before adding the filling. This creates grooves that help the cheese mixture grip better and prevent sliding during rolling.
I reserve half a cup of sauce to add after baking for fresh flavor. I nestle each lasagna rollup into the bottom sauce layer to prevent sticking, but don’t over sauce the top to avoid a watery dish.
You can enjoy these rollups straight from the fridge as a cold snack or quick lunch! I love eating leftover rollups at room temperature with a drizzle of olive oil and fresh herbs.

Recipe FAQs
The roll-ups are done when the cheese is melted and bubbly, and a knife inserted in the center comes out hot. The internal temperature should reach 165°F, and the edges should be lightly golden.
A simple green salad, garlic bread, or roasted vegetables complement these rich roll-ups perfectly. The acidity in a Caesar salad or the freshness of steamed broccoli helps balance the creamy cheese flavors.
Cook the noodles until just al dente and immediately lay them flat on kitchen towels. Handle them gently and if one does tear, you can often patch it together with a bit of cheese mixture – it won’t affect the final result.
