I bought this cute little bear bowl on my recent trip to Alaska and I’ve been looking for a great snack to make to fill it. When I saw the Microwave Caramel Popcorn recipe in the new Real Mom Kitchen Cookbook, I knew I’d found the perfect recipe. The Microwave Caramel Popcorn was quick, easy and addictively delicious.
Laura’s new cookbook is filled with quick, easy, delicious recipes to “make putting food on the table less stressful so you can enjoy your family time.” Real Mom Kitchen will be released next month. I was fortunate to have been given a digital copy to review. It’s a fun, colorful cookbook filled with recipes for busy moms. I couldn’t be happier for Laura for publishing her first cookbook. My husband and I met Laura early one morning when we walked by her street and she was out on her front porching photographing food. I said to my husband, “that’s a food blogger.” So I went over and introduced myself.
I asked Laura why she thought there are so many great food bloggers in Utah. She believes it’s because of the amazing women who came before us, our mothers and grandmothers. In fact, both this Microwave Caramel Popcorn recipe and her favorite recipe in the cookbook, Oven Stew, come from her mom.
Real Mom Kitchen gets about a quarter of a million hits every month and Laura was approached by two book companies after a story featuring her was on ksl.com.

Microwave Caramel Popcorn and Cookbook Giveaway
Ingredients
- ½ cup butter
- 1 cup brown sugar
- ¼ cup light corn syrup
- ½ tsp. salt
- ¾ tsp baking soda
- 2-3 quarts popped popcorn all just depends on how coated you want your popcorn
Instructions
- In a large, microwave-safe bowl, microwave butter, brown sugar, corn syrup, and salt on high for 2½ to 3 minutes until bubbling.
- Remove from microwave and mix in baking soda. Put popped popcorn in a paper grocery sack and pour caramel over popcorn. Fold down top of grocery sack and put in the microwave.
- Microwave on high for 1 minute and 20 seconds. Take sack out of microwave and shake to evenly coat the popcorn. Pour out on cookie sheet to cool.
