    Strawberry Cake

    This strawberry cake is beautiful! The strawberries speckled throughout the cake lend a visually appealing touch. When frosted with a luscious cream cheese or whipped cream frosting, the cake becomes a masterpiece that’s almost too beautiful to eat. Perfect for hosting a bridal shower, summer soirée or a beautiful Sunday dessert.

    A strawberry cake makes the perfect centerpiece for an event. Its light and refreshing taste embodies the spirit of summer and adds a dash of elegance to outdoor gatherings.

    Ingredients

    • Flour
    • Sugar
    • Butter
    • Milk
    • Eggs
    • Freeze-dried strawberries

    Recipe Instructions

    1. Preheat the oven to a toasty 350°F (180°C).
    2. Grab two 8-inch (20cm) cake pans and line them with parchment paper. Grease those pans with a generous coat of butter or cooking spray.
    3. Time to crush those freeze-dried strawberries! Toss them in a food processor and give them a good whizz until they turn into a fine powder.
    4. Now, in a medium-sized mixing bowl, toss together the flour, baking powder, and salt. Set it aside for a moment.
    5. In a large mixing bowl, cream together the butter and sugar until they become light and fluffy. Take it slow and steady. Then, crack open those eggs and add them one at a time, giving each one a good beating before moving on to the next.
    6. Gradually add the flour mixture and milk to the butter-sugar party. Alternate between the two, mixing just enough to combine everything nicely.
    7. Time to add that powdered strawberry goodness! Toss it in and give the batter a gentle mix until it’s just combined.
    8. Take your batter and divide it equally between the cake pans. Pop those pans into the preheated oven and let them bake for about 30-35 minutes. Keep an eye on them until a toothpick comes out clean from the center of the cakes.
    9. When they’re done, take the cakes out of the oven and let them chill in the pans for a cozy 10 minutes. After that, transfer them to a wire rack and let them cool completely. Patience pays off, my friend!

    Ingredients 

    • 2 ½ cups flour
    • 1 ⅔ cups sugar
    • 3 ½ teaspoons baking powder
    • 1 teaspoon salt
    • ⅔ cup butter
    • 1 ¼ cup milk
    • 3 eggs
    • 1 oz freeze-dried strawberries

    Instructions

    • Preheat the oven to 350°F (180°C).
    • Line two 8-inch (20cm) cake pans with parchment paper and grease the sides and bottom of the pans with butter or cooking spray.
    • In a food processor, crush the freeze-dried strawberries into a fine powder.
    • In a medium-sized mixing bowl, combine the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
    • Gradually add the flour mixture and milk to the butter-sugar mixture, alternating between the two, and mix until just combined.
    • Add the powdered freeze-dried strawberries and mix until just combined.
    • Divide the batter evenly between the prepared cake pans and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
    • Once the cakes have cooled completely, you can frost them with your favorite frosting. I highly recommend whipping up a batch of this strawberry frosting. It's perfect for this cake. Any cream cheese or buttercream frosting you like would also be great.

    • You can find freeze dried strawberries at Walmart and most other major grocery stores near the dried fruit and nuts.
