    Ingredients 

    • 1 box funfetti cake mix about 15 ounces
    • 2 eggs
    • ⅓ cup oil

    Frosting

    • 16 ounce vanilla frosting store bought or homemade
    • ½ cup butter room temperature
    • 1 teaspoon vanilla

    Instructions

    • To start, preheat your oven to 375 degrees Fahrenheit. Then, in a large mixing bowl, combine one box of Funfetti cake mix with two eggs and ⅓ cup of oil. Mix everything together until well combined. The result should be a thick, slightly sticky dough.
    • Using a cookie scoop, spoon the dough onto a parchment-lined baking sheet. Make sure to space the cookies out evenly, as they will spread slightly as they bake.
    • Bake the cookies for 7 minutes, or until the edges are lightly golden brown. Don't overbake them, as they will continue to cook a bit as they cool.
    • While the cookies are baking, it's time to make the frosting. In a stand mixer with a whip attachment, combine one can of vanilla frosting, ½ cup of room temperature butter, and one teaspoon of vanilla extract. Whip everything together until the frosting is light and fluffy.
    • Once the cookies have cooled completely, it's time to frost them! Spread a dollop of frosting on each cookie, then sprinkle some rainbow sprinkles on top. You can use as many or as few sprinkles as you like – it's up to you!
